Garlic Sweet Potato Pancakes

Garlic Sweet Potato Pancakes

Yields- 10 small pancakes
Ingredients
1 Large Sweet Potato
2 Cloves garlic (add more or use less for how much garlic you like
1 ½ eggs(may need to add more)
1 cup of bread crumbs(may need to add more)
Seasoning

Method

1. Peel and shred up Sweet Potato (use a food processor if you have the piece for it to shred)

2. Squeeze as much moisture out of shredded potato (tip- wrap in paper towel and squeeze it)
3. Grate Garlic into sweet potato using a micro plane or other alternative
4. Whisk eggs in a bowl and add 75% of it
5. Add breadcrumbs, a quarter of the total amount at a time. Mix with hands for best results
6. Continue mixing and adding eggs or breadcrumbs till you are able to form a pancake, will still break easy though. Season.
7. Heat up a pan with oil at medium heat and cook for about 5 min on each side, after 3 min of cooking, carefully lift pancake to see if its browning. Burns easily, keep a constant watch till browned then flip and watch every minute.

They are going to look burnt but they are just perfectly cooked and tasted very good

Tips-
Be really careful flipping the pancakes, they break really easily and need to be handled well.
Since they burn really easy, make one to begin with to see how long it will take to cook as a tester.
Might be easier to cook if you place in fridge for some time(haven’t tested yet)

I served them with a steak sandwich which was also equally delicious. I recommend this recipe to those who like to try different things.

Tomato and herb Bacon Wrapped Chicken Legs- Running porker chicken

This is my first recipe Post and I will try my best to make it look awesome. I Don't have a recipe source for this because all I did was wing it basically but I will include a list of what is needed.

Cook Time
Took my crappy oven 45 min

Ingredients
4-Chicken legs with hip(can be deboned, up to you)
1-Package of bacon( I used 12 pieces, 3 each leg. Can buy more depending on how much you want to use)
1-bottle of sauce( I used Prince Edward island's Tomato and Herb Sauce)(pic of sauce below)
Assortment of herbs and spices- rosemary, thyme and crushed black pepper corns
**Optional** Melted butter or Non-stick Spray

Other stuff
Thermometer
Oven safe tray
Tin Foil
Brush

Preparation
Grab a oven safe tray that can hold 4 pieces of chicken and wrap tin foil around it if you don't want too much of a mess to clean up after. I recommend spraying it with some sort of anti stick spray. Set Oven to 375

Begin to wrap chicken with bacon, three pieces was good for me but you can always add more if you please.

Season at this point. If you want a deeper seasoning taste then season before you wrap just so its under the bacon. Doesn't matter too much.

**TIP** IF you don't wrap the bacon on tight enough it won't stay as well as you want, maybe brushing some melted butter on the chicken first then  adding the bacon would be a good idea.

This is the sauce that I used, any sauce will do, Other recommendations are Honey based, BBQ based or Chipotle based sauces.

They are all good but this is what I used for the recipe, not sure if you can import it but if you ever make a trip a P.E.I. should pick up this sauce.

Pour about 2 ounces of sauce on each chicken as shown in the picture, this should be enough. Grab a brush or a spoon what ever is available, or you can even use your fingers if you wish. Make sure you brush it completely so its fully covered.

This what it should look like with 2 ounces of sauce.

Now it is prepared to go into the oven. setting it on the middle rack and come back in 20 minutes to check the temperature.

This is what it looked like after 20 minutes for me. After this point check the temperature every 5-8 minutes and make sure its at 160 F. 165F is the temp you want it to be but it will continue cooking for a few more minutes.

Here are some Finished pictures of my dish. I made some veggies on the side. Hopefully you like this very simple dish. Its incredibly tasty so you should try it. ENJOY!!
