Pistachio Crusted Salmon with a King Crab, Spinach and Cream Cheese side

This recipe turned out so much better then I was expecting. I highly recommend making this for dinner. I got the recipe from this site and came up with the side myself. I took a ton of pics especially the final plating, my last post didn't have enough photos so I decided I would over do it with this one. For the mustard mixture, I made way too much and ended up throwing away most of it. I will tone it down from the website's recipe. Well here are some photos

Ingredients
Pistachio Crusted Salmon
1 large        Salmon Fillet
1 each         Lemon ( juiced )
2 tbsp         Crushed Mustard
1 cup          Shelled Pistachio Nuts (remove from shell)
1/2 cup       Panko Bread Crumbs
4 tbsp         Canola Oil
To taste      Salt and Pepper

Crab Mixture
1 cup          Alaskan King Crab
1/2 cup       Spinach ( cooked in butter )
2 tbsp         Cream Cheese
1 tbsp         Butter
1 tsp           Olive oil

Method
Pistachio Crusted Salmon

2. Mix crushed Mustard with lemon juice into a bowl until thickened.

3. Remove Shells from Pistachios and place inside a food processor or pestle and mortar and crush them down a bit with some oil, then add bread crumbs and season with salt and pepper.

4.Place Salmon skin side down on a backing sheet and smear the mustard mix onto the flesh of the Salmon.

5. Spread the Pistachio mix onto the salmon and create a layer completely on the Salmon.

6. Cook for 15-20 minutes till it looks like this.

Crab,Spinach, and Cream Cheese Mixture

1. Wash Spinach

2. Cook Spinach in butter till wilted in a pan and set aside.

3. Grab a pot and set to med-high heat and some oil and the crab meat.

4. After 1 minute, add cooked spinach and stir in. Season at this point.

5. After another minute of cooking add the cream cheese in small pieces.

6. Stir in the cheese and when its fully incorporated, its ready to be plated.

Well there it is. This was incredibly delicious meal I made and will make it again sometime. I want to try different crusting for salmon and other meats. This is a really simple meal and its very elegant. Good luck. Please subscribe and comment letting me know what you think and suggestions are always welcome.
